Sweet Pepper Relish

If you are looking for a recipe from the Civil War era you might want to try this one.  I picked this up at the Robert Toombs house in Washington, Georgia.  It is a Sweet Pepper Relish as made by Mrs. Toombs.

12 red peppers
12 green peppers
12 medium onions
1 1/2 pints vinegar
2 cups sugar
2 Tbls. salt

Slice open red peppers & green peppers.  Remove & throw away seeds. Then mince peppers & put in large kettle. Take skin from onions.  Now mince onions & toss into kettle with peppers. Add vinegar, sugar, & salt.   Blend everything well.  Bring to boil & let simmer 10 minutes.   Take from stove.  Fill pint jars while hot & seal.  Makes 4 pints.
