Squash Au Gratin (serves 6)

So many times I focus my meal around my main entree & forget about making the side items special as well.  So here is an easy side item that is quick & wonderfully delicious. 

2 Tbsp butter
4 cups of thinly sliced squash (yellow)
1 sliced onion
1 tsp salt
Dash pepper
1/4 cup water
1/4 cup grated cheese

Melt butter in saucepan.  Add everything except the cheese & cook covered for 10 to 15 minutes or until the squash is tender.   Sprinkle with cheese & serve.
