Shrimp Creole (serves 4)

I bought some shrimp & it has been sitting in my freezer because it still needed to be peeled (and I hate peeling shrimp).  My husband was home today so I knew he wouldn't mind doing it for me....especially if I was going to make shrimp creole!  Here is an easy recipe for you to try.


2 Tbsp butter
1/8 cup olive oil
1 large chopped onion
1/2 cup green bell pepper
1 tsp garlic powder
Dash of salt & pepper
1/8 tsp dried rosemary
1/8 tsp paprika
2 cups canned tomatoes
1 lb cleaned cooked shrimp
2 to 3 cups hot cooked rice

Melt butter in saucepan & add olive oil to it.    Add onion, bell pepper, garlic powder & saute 10 minutes or until tender.  Add salt, pepper, rosemary, paprika, tomatoes.  Bring to a boil, reduce heat & simmer for 15 minutes.  Add your cooked shrimp & heat thoroughly.  Serve over rice. 

You might want to double the recipe to make extra...it is so good
